Thai Basil and Beef
1 package stir-fry beef
5 cloves of garlic, minced
1 jalapeno pepper, chopped
1/2 tsp sea salt
1 tbsp soy sauce
1 handful of fresh basil
1 package of broccolini
1 red pepper, sliced
Add the beef to a wok and sauté about 5 minutes with olive oil. Add garlic. Cook through about another 5 minutes. Add remaining ingredients. Cook uncovered for about 10 minutes until vegetables are softened but still crisp. Serve.

Lemongrass Beef Salad
1 package stir fry beef
1 stalk lemongrass, minced
1 carrot carrot, finely sliced
2 mini cucumbers, finely sliced
1 cup lettuce, chopped
1 tsp Chinese five spice
1/2 tsp sea salt
1-2 cups bean sprouts
cilantro
5-6 green onion, sliced
Cook the beef in a med heat pan with the five spice, lemongrass, and salt. Assemble salad with the veggies above. Top with beef and serve with sriracha and fish sauce.

Chinese Beef and Broccolini
1 pkg hamburger meat
1 tbsp Chinese 5 spice
1/2 tsp salt
2 tbsp coconut aminos or soy sauce
1 pkg broccolini, halved
4-5 mushrooms, sliced
1 handful of kale
2 tbsp green onion
1 tsp Chinese 5 spice
1/4 tsp salt
Mix the hamburger, 1 tbsp Chinese 5 spice, and 1/2 tsp salt together. Form into meatballs and cook in a pan on medium heat. 5 minutes before the meatballs are done add 1 tbsp of coconut aminos or soy sauce. While the meatballs are cooking in another pan add 1 tbsp olive oil, broccolini, mushrooms. Cook on medium heat for about 8 minutes. Add the kale, 1/4 tsp salt, 1 tbsp coconut aminos or soy sauce and cook for another 5 minutes. Once done, add the green onions and serve.

Burrito Skillet
1 pkg hamburger meat
1/2 red onion, chopped
2-3 cloves garlic, chopped
1 red pepper, chopped
1 pint mushrooms, chopped
1 tsp salt
2 cups cauliflower rice
1 tbsp chili powder
Fry together all ingredients, except cauliflower, in one large skillet. Once cooked through, add the cauliflower rice and stir through for about 5 minutes. Serve with fresh salsa, guacamole, cilantro, and/or sour cream.

Grilled Burger with Veggies
1 hamburger patty
1/2 red and yellow pepper, chopped
1/4 red onion, chopped
2-3 stalk of asparagus cut in 3 inch pieces
3-4 fresh mushrooms sliced
1 sprig of rosemary
balsamic vinegar
Place the veggies and rosemary in a tin foil pan with some seasoning and olive oil. Grill uncovered on top rack. Grill the burger with some Montreal Steak spice. Place the burger on a plate and top with grilled veggies. Drizzle with balsamic vinegar. (You can save time and money by buying the grilled veggie mix from Safeway already prepped and ready to heat. You can also serve this with a veggie burger or a salmon burger.)
Taco Salad
1 pkg of ground beef
1 cup frozen corn
Romaine lettuce, chopped
handful of cherry tomatoes, halved
1 red pepper, chopped
1 avocado, chopped
1/4 cup green onion, chopped
handful of tortilla chips, crushed up (optional)
mint and/or cilantro, chopped
1 tbsp lime juice
1 tbsp olive oil
1 tsp balsamic vinegar
Goat cheese
Fry up beef and season with onion flakes, garlic powder, chili powder, salt and pepper. When cooked, add the frozen corn to heat through. Set aside.
Toss together lettuce, tomatoes, red pepper, green onion, and avocado in a large bowl with the oil, vinegar, and lime juice. Add the greens mixture to a single serve bowl. Garnish with cilantro and mint. Top with beef, corn, tortilla chips, and goat cheese. Serve.
Beef Satay Stirfry
1 package of fresh Asian vegetables mix from Safeway (or slice your own carrots, snow peas, mushrooms, red pepper, bean sprouts)
1 package of stir fry beef
2 tbsp almond butter
1 tbsp coconut oil
1 tbsp thai red curry paste
squeeze of lime juice
salt
chili peppers (optional)
Marinate beef in coconut sauce (soy sauce substitute), fresh ginger, garlic, lime juice, cumin. Cook the beef on a grill or in a pan and set aside. Place the carrots, mushrooms, red pepper, curry paste and coconut oil in a wok and cook through for about 10-5 minutes. Add the remaining ingredients. Warm through and serve.
Shepherds Pie
1 lb hamburger meat
1/2 cup carrots, chopped
1/2 red onion, chopped
1 tbsp garlic, minced
2 roma tomatoes, peeled and chopped
1.5 tsp salt
2 tbsp traditional balsamic vinegar
1 handful fresh basil, chopped
2-3 cups cauliflower rice
75g garlic & fine herb boursin cheese
1/2 cup goat mozzarella cheese
In a frying pan cook together hamburger, carrots, onion, garlic, salt, vinegar, basil, and tomatoes. Once cooked place into a casserole dish. In the same pan heat the cauliflower and boursin cheese until cheese is melted through. Pour over the meat mixture. Top with the goat mozzarella cheese and cook uncovered for 25-30 minutes at 350F. Serve.

Deconstructed Classic Burger
1 hamburger patty cooked, chopped
1/2 avocado, chopped
1 tbsp red onion, chopped
2 slices tomatoes, chopped
1/2 cup lettuce, chopped
3-4 white mushrooms, grilled & chopped
1 small pickle, chopped
Mix ingredients together and top with mustard and ketchup. (Optional: make a flatbread (pizza recipe) and use as the bun for the burger.)

Healthy Hamburger Helper
1 pkg of ground beef
½ onion, chopped
2 cloves garlic, minced
1/2 cup carrots, chopped
1/2 cup frozen peas
1 pint mushrooms, sliced
1/2 cup cauliflower rice
2 tbsp Dijon or regular mustard
2 tbsp apple cider vinegar
1 tbsp tarragon
1.5 tsp salt
squeeze lemon juice
Fry hamburger in a pot and cook through. Add onion, garlic, carrots, mushrooms and stir through for about 5-10 minutes. Add mustard, vinegar, tarragon, salt and lemon juice. Stir through and cook covered for 30 minutes on med-low heat. Add the peas and cauliflower to warm through (about 5 minutes). Serve.
BBQ steak with beet and pear salad
Baby lettuce greens
Pickled beets sliced
Pear sliced
1 tsp walnuts
1 tbsp crumbled goat cheese
1 tsp balsamic vinegar
1 tsp olive oil
Toss together ingredients above and serve with grilled steak.

Pan roasted beef tenderloin with green bean salad
Beef tenderloin
¼ cup balsamic vinegar
1 handful of green beans cut into 1 inch lengths
2 big carrots cut into matchstick piees
10 cherry tomatoes cut in half
1 shallot chopped
1 clove garlic chopped
2 tbsp Dijon mustard
1 tsp tarragon
2 tsp white wine vinegar
1 tbsp lemon juice
Place a little olive oil in a skillet and sear beef tenderloin on all sides. Place beef in a roasting pan and cook to desired doneness at 350F. Blanch green beans and carrot for about 3-4 minutes. Place beans, carrots, and tomatoes in a large bowl. Mix together shallot, garlic, mustard, tarragon, white wine vinegar and lemon juice to make a dressing. Mix together with vegetables. Add balsamic vinegar to pan the beef was seared in. Add tarragon and reduce to a sauce consistency. Pour sauce over beef when cooked and serve with green bean salad.
BBQ Steak w/ Apple Walnut Salad
For the steak:
Steak
Montreal steak seasoning
Grill or broil seasoned steak at 425F until done.
For the Apple Walnut Salad:
4 cups mixed spring mix lettuce
1 apple, chopped
1 cup walnuts
1/2 cup grated pecorino cheese
balsamic vinegar
olive oil
Toss together above ingredients and serve.

Lemongrass Beef Pho
Broth:
1 package stir-fry beef
1 carrot carrot, chopped
2 inch piece of ginger, peeled
1/3 red onion, chopped
1 tsp Chinese five spice
3 tsp sea salt
10 cups water

Accompaniments:
1/2 lime cut into wedges
8 white mushrooms, sliced
1-2 cups bean sprouts
cilantro
basil leaves
5-6 green onion, sliced
red peppers, finely sliced
In a large soup pot, brown the beef, ginger, onion, carrot, five spice, and salt until the bottom of the pot turns dark brown but not burnt. Add in the water. Simmer covered on medium low for 45 minutes. On a large plate, assemble the accompaniments. Add the fresh accompaniments to a soup bowl and then top off with 1-2 cups of the meat and broth. Serve with sriracha sauce.
Quick Skillet Chili
1 lb hamburger meat
1 pint mushrooms, sliced
1/2 red pepper, chopped
1/2 cup cauliflower, chopped
2 tbsp red onion, chopped
1 tsp garlic, chopped
2 tbsp tomato paste
1 tbsp chili powder
3/4 tsp salt
Fry up above ingredients except tomato paste for about 15-20 minutes. Stir in tomato paste and heat through for about 3-4 minutes. Serve with guacamole or creme fraiche.

Meatloaf
1 pkg of ground beef
1 tbsp montreal steak spice
1 tsp onion flakes
Mix together all ingredients. Place in a small loaf pan. Cook for 45 minutes at 350F. Serve with creamed spinach and mushrooms. (recipe here)
Red Curry Beef w/ Jasmine Rice & Steamed Carrots and Green Beans
1 pkg of ground beef
½ tsp minced garlic
1 tsp grated ginger
1-½ tsp red curry paste
1 can of coconut milk
2 tsp lime juice
3/4 tsp real salt
1-2 tbsp almond butter
handful of fresh basil
Heat large skillet over medium heat and add oil. Add beef strips and sear until 3/4 cooked. Place beef in a bowl and set aside. Discard juice from skillet or boil it down. Add garlic and ginger and sauté until garlic is tender without browning. Add coconut milk, red curry paste, lime juice, salt and basil. Cook sauce for about 15 minutes. Add the beef to the sauce and simmer until cooked through. Add the almond butter just before serving and stir through. Serve on rice with steamed veggies.

BBQ Steak Roasted Veggie Salad
Steak and spice
Red pepper, chopped
Yellow pepper, chopped
Fresh mushrooms, chopped
red onion, chopped
Avocado
Goat cheese
Balsamic vinegar
Olive oil
Steak spice
Add the veggies and the oil to a pan and grill on BBQ. When done, add goat cheese, avocado, balsamic vinegar. Serve with grilled steak.
Chili
1 pkg of ground beef
1 bell pepper, chopped
½ red onion, chopped
1 pint mushrooms, chopped
1 tbsp garlic, minced
1 large can of crushed tomatoes
1 tbsp chili powder
1 tsp cumin
1/4 tsp cayenne pepper, optional
1 tsp sea salt
Place hamburger in a large pot and start frying on medium heat. Add diced pepper, garlic, onion and mushrooms and cook for 4 minutes. Add spices and tomatoes. Simmer covered on low heat for 60-90 minutes.

Spaghetti with Carrot Noodles
1 pkg of ground beef
1.5 tsp real sea salt
1 tsp thyme
1 tsp oregano
1 tsp basil
1 can crushed tomatoes (no added salt)
3 cloves garlic
2 tsp sugar
Cook hamburger meat in large pot. Add all ingredients and stir through. Cook covered on low heat for 90 minutes. Serve over spiralled carrot noodles.
Souvlaki Skewers
2 tbsp dried onion flakes
1 tsp dried oregano
1-2 garlic cloves minced
1 tsp salt
¼ tsp pepper
¼ tsp ground allspice or chinese 5 spice
1 pkg of ground beef
½ cup apple peeled and minced
1 tsp lemon juice

4 servings of cauliflower rice, cooked
1 cup romaine lettuce, shredded
½ cup cherry tomatoes, sliced
¼ cup red onion, chopped
Renee's caesar salad dressing
cilantro to taste
Combine first 11 ingredients and form into bite size meatballs. Place 5 meatballs on a skewer. BBQ meatball skewers for approx 15 minutes turning often. Place 1 serving of cauliflower rice in a single serving bowl. Top with lettuce, tomatoes, onion, cilantro, meatballs and caesar dressing. Serve.
