Chocolate Coconut Pudding
1/2 avocado
2 tbsp unsweetened coconut
1/4 cup almond milk
1 heaping tsp cocoa
1 packet sweet leaf stevia (optional)
Blend in mini food processor or blender and serve.

Pancakes
1 egg
2 tbsp almond flour or coconut flour
1/2 tsp baking powder
pinch of salt
splash olive oil
sprinkle of cinnamon
Mix egg in a bowl. Add remaining ingredients. Pout batter in a small hot pan and cook for about 3 minutes each side. Serve with berries.
Egg with Tomatoes and Avocado
7 cherry tomatoes, halved
6 asparagus stalks, chopped (or a handful of spinach)
1 tsp olive oil or coconut oil
2 cloves garlic, chopped
1 egg
1/2 avocado, chopped
1 tbsp balsamic vinegar
Add oil, garlic, tomato and asparagus to heated frying pan. Stir through a few minutes until cooked through and then set aside in a bowl. In the same pan, fry the egg. Place over top the veggies. Top with avocado and drizzle with balsamic vinegar. Add salt and pepper to taste.
Digestive Elixir
1/4 cup almond milk
1 cup hot water
1/2 tsp ginger
1/2 tsp turmeric
1/2 tsp cinnamon
1 tbsp coconut oil
Blend and serve.

Eggs Benedict
1 soft poached egg
1 portobello mushroom
2 slices round back bacon
2 tbsp goat cheese
balsamic vinegar
Grill the mushroom on the BBQ for about 5 minutes each side. Place the back bacon on the BBQ to warm through. Place the mushroom on a plate. Layer with back bacon, goat cheese, egg and then drizzle with balsamic. Serve with seared asparagus on the side.

Vanilla Almond Milk
21 almonds
2 cups water
1/2 tsp vanilla extract or vanilla bean
Process all ingredients in blender until creamy. Strain through fine mesh strainer or cheese cloth. (If you want the added fiber, skip the straining). For chocolate milk add 2 tbsp cacao powder. For Chai milk add 1 tsp cinnamon, 1/2 tsp ground ginger, 1/2 tsp garam masala, 1/4 tsp nutmeg.
Almond milk will store in the fridge up to 3 days.
This makes 3 fat servings.
Blueberry French Toast
1keto flatbread (See pancake recipe)
1 tsp coconut oil
Sprinkle of cinnamon
¼ cup frozen blueberries
Spread coconut oil on flatbread once cooked. Sprinkle with cinnamon. Top with blueberries and cream.

Coconut Breakfast Cereal
4 tbsp unsweetened organic coconut
dash cinnamon
dash cocoa
2 tbsp strawberries or raspberries, chopped
2 tbsp chopped nuts of choice
almond milk to desired texture
Mix and serve.
You can vary the spices, nuts, and nut milk to create different flavours.

Frozen Raspberries and Cream
2 tbsp frozen raspberries
2 tbsp creme fraiche
1 packet stevia
splash of vanilla, optional
Mix together until blended together and serve.

Strawberry pudding
1/2 avocado
1/4 cup strawberries
2 tbsp walnuts, chopped (or any other favorite nut)
1/4 almond milk
Blend together all ingredients except nuts until smooth. Top with chopped nuts and serve.

Apple Nut Mix
1/2 apple, chopped
1 tbsp pumpkin seeds
1 tbsp walnuts
1 tbsp pistachios
1/2 tsp cinnamon
1/2 cup water or almond milk
In a mason jar, add all ingredients. Shake or stir and refrigerate overnight. Eat warm or cold.
